Super Food Pesto Fettucini


Ok, y’all know I love pasta ? and am always figuring out ways to make it “good for us” to indulge in (at least once a week here in our home) and yep, this is the easiest and quickest way to do it.

I make this sauce often. This Superfood Pesto sauce really goes well with any pasta – This is Spinach Fresh Fettucini. I’ve also used veggie noodles such as zoodles! This is safe to eat fully raw or heated up: your choice! All I know is it makes for a a delicious dinner for 2 and hubs wasn’t complaining! Nutritious and delicious, you gotta give it a shot.




2 Oz Fettucini, cooked (or other pasta, veggie noodle of choice)

1/3 cup pine seeds
2-3 cloves garlic, chopped
2 cups fresh Basil
1 cup chopped kale
1 cup baby spinach
Sea Salt and ground black pepper to taste
1/2 cup Olive Oil
1/4 cup cashews

Optional: 1/4 cup parmesan

Other toppings :
2 Oz sun dried tomatoes, julienned
12 kalamata olives chopped
1/4-1/2 any milk


Except for oil, Mix all in ingredients in food processor. Add oil slowly. Use immediately. Keeps well in fridge for 2-3 days or freeze.

Cook pasta per directions or spiralize veggies. Enjoy this delicious dish!

If you like your sauce a bit runnier, add milk of choice to #pestosauce pan and thin it out. Mix together pasta and sauce. Add chopped sun dried tomatoes and olives.
