Mini Vegetarian Quiches and Tulips for Brunch





Up close and personal with Sunday Brunch! This was first course for the in-laws: Mini Quiche, colorful green salad and Avocado. 

These mini quiches are a great way to reuse leftover bread, especially the butts! The bread butts form a small cut for holding the contents of the quiche! I like to make use of everything in the kitchen and only throw things away if they spoil, otherwise, repurpose! ________________________________
Easy Mini-Quiches:
Preheat oven to 350F.
All I do is spray muffin tins with cooking spray, form the bread butt in there and pour some scrambled eggs over the top and bake until set. 
The “filling” was chopped spinach, sun-dried tomatoes and a goat cheese sprinkle. They were delicious with a colorful side salad and half of a mini avocado!
