Keto Butter Chicken with Cauliflower Rice and Cauliflower “Naan”

Butter chicken! But keep it low carb and delicious! All the flavor without feeling stuffed in the end.

I don’t know about you but I ALWAYS overeat when it comes to this dish because my mouth keeps wanting more and more of the spicy and tangy and I keep going for it!!

The truth is, the rice and naan are what typically what makes me so full but the butter chicken flavor is what makes me keep eating! Here is a low carb option to those if you who are also butter chicken lovers!!!

KETO BUTTER CHICKEN with Cauliflower Garlic “Naan”


I like to use the Shan butter chicken mix but if you don’t have the butter chicken mix, add these spices together:


SPICES

  • 2 tbsp minced garlic
  • 1 tbsp grated ginger
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon red chili powder
  • 1 teaspoon of salt

INGREDIENTS

  • 3 chicken breasts, cubed1 Lb tomatoes (or a 32oz of crushed tomatoes)
  • 2 tbsp lemon juice (juice from 1/2 lemon)
  • 1/4 cup plain yogurt 1/2 cup of heavy whipping cream
  • 1 stick of butter (1/2 cup)
  • 2 tbsp olive oil 1-2 tbsp ghee

CAULIFLOWER RICE

  • 1/2 large head of Cauliflower, riced
  • 1 tbsp minced garlic
  • 1 tbsp olive oil
  • Salt and pepper to taste
  1. Pulse the cauliflower florets in a food processor or grate gently until the cauliflower resembles rice.
  2. Cook on medium heat with olive oil and garlic for 3-4 minutes. The cauliflower naturally releases moisture and it won’t be long until it is soft.

For the marinade:

  1. Mix all spices together with the plain yogurt, lemon juice and olive oil.
  2. Mix the chicken with the marinade, cover and allow it to sit for 2-3 hours in the fridge.


For tomato sauce:

  • 1 lbs of Roma tomatoes or a 32oz can of crushed tomatoes
  1. If using 1 lbs it fresh tomatoes, boil them for about 10 minutes.
  2. Skin and seed tomatoes and use a potato masher to gently crush and set aside in a sauce pan. You can also use a can of crushed tomatoes which you would just heat up. I’m not judging you, you’re judging yourself haha.

Prepare the chicken

  1. Once fully marinated, pan sear chicken in 1-2 tbsp of ghee (or 1 tbsp of butter and 1 tbsp of olive oil) and sear along with the marinade, about 2-3 minutes per side until cooked.
  2. Add chicken to the crushed tomatoes and simmer for 10 minutes.
  3. Add 1 stick or butter and allow flavors to marry for 5 minutes.
  4. Finish with heavy whipping cream, just mixing it though and serve immediately over white rice, or if you’re keeping it low carb over cauliflower rice.


LOW CARB GARLIC NAAN

  • 1 package of original Outer Aisle sandwich thins
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • Fresh cilantro for sprinkling
  1. Preheat oven to 400°F.
  2. Mix olive oil and garlic together and brush on the thins. Sprinkle finally chopped cilantro over thins and bake 4-5 minutes until it browns. Serve on the side.

This is just delicious, part of a low carb high fat diet and will satisfy you without making you stuffed! These thins also “double” as taco shells, mini pizzas (they also have personal pan pizza crusts), tortillas or anything else you’d like to make!

This was the perfect match! I will be making this one over and over again. Because you know, my butter chicken obsession is pretty much part of me now. This is just a healthier way to enjoy it.
