Colorful Sweet Potato Baked Skillet

The most colorful baked Sweet potato hash skillet packed with BIG flavor! Don’t be intimidated, it’s so easy to make! Hubby likes this one because it only makes 1 dirty dish and he’s on dish washing duty since I’m back, which also means #BrunchItOnSundays is on!

Today we had this simple, 30 minute dish that I’m happy to share with you!

Colorful Baked Sweet Potato Skillet

WHAT

2 medium sweet potatoes, cubed
1/2 cup bell peppers
1/2 cup chopped red onions
2 tbsp chopped garlic
2 tbsp chopped green chile
2 handfuls of spinach
4 brown eggs
Multicolored cherry tomatoes, halved
1 oz feta or goat cheese crumbles for sprinkling
Salt and pepper

Hint: Use oven safe skillet – I used cast iron, perfect for making hash

HOW

Preheat oven to 375deg F.
Heat up cast iron skillet on medium and Sautée onions and garlic in about 1tbsp evoo for 2-3 min until translucent. Add sweet potatoes and peppers with another tbsp of evoo and sautée for about 10-12 minutes until tender. Be sure to use salt and pepper to taste!

Add spinach and green chile and allow it to wilt for a couple of minutes.

Make 4 grooves and crack the eggs evenly (or unevenly!) this is your party! Spread halved tomatoes over the top and sprinkle feta crumbles.

Move skillet to oven and it will take about 10 minutes for the eggs be baked through but still have a runny yolk.

Get it out (take a picture), allowing it to cool for about 5 minutes and enjoy!
