Strawberry Grilled Cheese

Not your typical Grilled Cheese! Happy to be back home, and clearly inspired! Most people don’t think about adding fruit to the nostalgic sandwich but French Toast meets grilled cheese for an amazing Sweet and Savory flavor that is guaranteed to please! #Brunchitonsundays came earlier today and brunch was this awesomeness!
What I did:

Strawberry ?Feta Grilled Cheese

2 slices of oat and nuts bread
2-3 large strawberries, sliced
1 oz crumbly feta (works great with goat or bleu cheese as well)
Baby spinach
Homemade Pomegranate balsamic reduction

HOW

You can make it 2 ways.

Toaster oven:

Toast the bread in toaster over at around 350deg F first, then layer the cheese crumbles, strawberry and spinach and place back in oven for 2-3 minutes until the cheese begins to melt.

Stove Top:

Layer the sandwich with cheese, strawberry and spinach and grilled it stovetop until it’s golden brown. Careful when flipping it!

For the pomegranate balsamic reduction:

Use 1/4 cup balsamic vinegar and 1/4 cup pomegranate juice. Reduce together in small sauce pan in medium heat for 5-6 minutes. The alcohol will evaporate and become a syrup, slightly tasting of pomegranate balsamic. Add over the top of grilled cheese!
