Cinnamon Raisin Berry French Toast

Celebrating the first REAL brunch in our new home here in St. Louis area! Yes, we nearly 2 weeks ago, and I can’t hardly believe it! Winecoach’s dad is here this week helping us settle in so I had to make something special for him, as well as for my mom who is staying with us waiting for the arrival of Baby Sandee!! She’s almost here and I’m 38 weeks pregnant this week. Time sure is flying and Christmas is also just around the corner, right after her due date on December 22nd. I wonder if she will come early, right on time, on Christmas or even after Christmas! We are excited for the debut, but in the meantime, WE EAT! This was on the menu today because, Colorful Pregnancy cravings! This batch feeds 4 people at 3 slices of bread per person (these cinnamon raisin slices are smaller compared to regular bread), so adjust measurements to your needs. Too easy to make:

CINNAMON RAISIN BERRY FRENCH TOAST 

WHAT

For the French Toast Mixture

  • 1 egg, 2 egg whites (or 2 eggs)
  • 1 tbsp ground cinnamon
  • 1-2 tbsp coconut sugar, honey or maple syrup
  • 1 – 1.5 cup milk of choice
  • 1 tsp vanilla extract
  • 12 slices of bread cinnamon raisin bread

Healthier Cream Cheese Filling

  • 3/4 to 1 cup low fat Greek yogurt or strawberry yogurt
  • 1/2 cup low fat cream cheese, room temperature
  • 1 tsp vanilla extract
  • 1 tbsp honey or maple syrup (if using Greek yogurt)

Toppings

  • 1-2 cups of mixed berries: strawberries, blueberries and raspberries or whatever you got at hand!
  • Whipped cream
  • Chopped pecans
  • Maple syrup for drizzling – I used Parker’s Maple Syrup
  • Optional: Bacon

HOW

  1. Mix all French toast mixture ingredients together. Set bread aside.
  2. Mix together cream cheese and yogurt. Add honey for added sweetness if needed. Remember you’ll be drizzling with maple syrup so no need for this to be super sweet.
  3. Dip bread into french toast mixture and in medium heat, cook the french toast.
  4. TIP: If making bacon, fry bacon and use bacon fat to cook the french toast. You’ll be happy you did! You don’t eat this everyday!
  5. Layer french toast with cream cheese/yogurt mixture and chopped up strawberries. Layer them as high as you’d like! Some people might want more than 3 slices, Heyyyy.
