Spicy Breakfast Pizza

What to make with fresh farm eggs straight off the coup? Breakfast, lunch or dinner, That’s what I say! Looks laborious and complicated but really quite easy to make! Brunch It On Sundays meal versatility right here: Breakfast pizza! BUT don’t limit this fabulous brunch item to just breakfast, as it could very well be lunch or dinner as well!
How it’s done:

Spicy Breakfast Pizza 

HOW

2 low carb whole wheat wraps
Mild and hot Red pepper sauce
8 multicolored Roma tomatoes
4 eggs
1/4 of red, orange and yellow bell pepper
1-2 oz fresh mozzarella (or shredded)
1/2 avocado, Diced
Black olives
Fresh basil
Oregano to taste
Optional:
Prosciutto
 
HOW
Preheat oven to 375F.
Use a flat sheet pan to place your tortilla all wrap. Spread red pepper sauce and sprinkle light shredded cheese over the top of the tortilla wraps
Layer prosciutto on top. Chop tomatoes into thin slices and layer over tortilla.
Chop bell peppers and sprinkle lightly followed by olives.

Crack eggs in a separate ramekin to 1) make sure they are “good” eggs? And 2) don’t break! Place them gently and apart from each other. Sprinkle some more of the cheese as well as dried oregano. the

Place in oven for 10-12 minutes until the eggs whiten Over the top to desired “done-ness”. I like mine over easy so they are just runny, and that takes around 12 min to be just right!

Remove from oven and add avocado and fresh basil leaves over the top.

Makes 2 if you’re hungry, or 4 if you serve with a big salad on the side! I took care of my half, believe it!

Enjoy with a side of fruit and freshly squeezed OJ or infused water! I know it can be breakfast or brunch, but why not Brinner as well?
