Spiced Apple Waffles

3 good reasons to make warm Spiced Apple Waffles for #BrunchItOnSundays! Because:

1) it’s Fall
2) Apple season
3) spiced everything

So….I had to. The waffles are a bit more doughy and dark than usual because there is actually apple in the batter, with caramelized apples on top! Delicious, and you owe it to yourself to make it for brunch one of these Autumn mornings…
What I did.

Spiced Apple Waffles

Ingredients

3 eggs, separated
3/4 cup buttermilk, warmed
3/4 cup milk, warmed
2 tbsp coconut oil or butter, melted
1 Granny Smith apple, peeled, cored and grated
1 1/2 cups flour (or what I did: 1/2 cup flour, 1/2 cup almond meal, 1/4 cup ground flax seed, 1/4 cup amaranth flour)
1 1/2 tsp. baking powder
2 tsp. pumpkin pie spice
1 tsp. cinnamon powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup sugar
1 cup toasted pecans pieces
1/4 cup honey or agave

For caramelized apples
2 Granny Smith apples, chopped
1/3 cup maple syrup or honey
1 tbsp coconut oil or butter
1 tbsp organic cane sugar

Optional:
Almond butter
Bacon, cooked, chopped finely

HOW:

In a large bowl, whisk together the egg yolks, buttermilk, milk, butter/oil, and honey. Add the grated apple and stir to combine.

In another bowl, whisk together the powders: flours, baking powder, cinnamon, pumpkin pie spice, baking soda and salt. Add the flour mixture to the egg yolk mixture and whisk until smooth.

Use a mixer to beat the egg whites until soft peaks form. Fold half of the whites into the batter, then carefully fold in the remaining whites. Let it sit while you make caramelized apples.

For caramelized apples: Melt butter or oil in large skillet over medium heat; sprinkle sugar Until it begins to melt, about 1 minute. Add apples and maple syrup. Sauté until apples are brown and tender and juices form, about 10 minutes. While that is happening you can make the waffles!

Sprinkle some of the chopped pecans onto the waffle maker. Pour about 2/3 cup of the batter onto the surface. Cook the waffles until golden brown, about 5 minutes.

Layer Spiced Apple waffles. Optional: Add almond butter and chopped bacon in between layers. Top with caramelized apples and pecan pieces.

This is just delicious!
