Quick Colorful Omelet

It doesn’t get any simpler than this. If you want something quick and easy, but delicious and healthy, an omelet is the easiest way to go. Requires very little time and preparation, and really, anyone can do it. Good for brunch or Brinner!

Quick Colorful Omelet

3 egg whites
7-10 cherry tomatoes, chopped
5-6 kalamata olives, chopped
6-7 asparagus spears
1 tbsp crumbled feta
3-4 fresh basil leaves
1 tbsp avocado on top
Salt and pepper to taste
Nonstick Grapeseed oil

HOW:

Roast asparagus but lighting seasoning and spraying with Grapeseed oil and baking for 5-7 minutes. Blend egg whites and season. Use a 10″ nonstick pan to make omelet. Top it with toppings as seen in picture or any way you want it! Enjoy!
