Salmon Cucumber Radish Salad

  
The simplest and most colorful dish ever! Super easy to make, fresh and full of nutritional value! I always get excited when I can mix all colors together and it tastes just as good as it looks! This is the perfect “summer salad”!.

Colorful Cucumber Radish Salad

WHAT

1 small cucumber, chopper
1 pixie tangerine, segmented 

1 watermelon radish, chopped 

Dressings 
1 tbsp maple syrup

2 kumquats, squeezed or Juice of 1 lemon

Small bunch of cilantro to taste 
Protein 

1 salmon fillet

1/2 tbsp avocado oil 

juice of 1/2 a lime

Salt and pepper to taste
Topping

1/2 of a passion fruit

1/4 of an avocado

HOW

Combine chopped cucumber, watermelon radish and tangerine. Toss with maple syrup, juice of kumquats or lemon along with fresh cilantro. Let it sit.

Add 1/2 tbsp avocado oil or evoo in a medium heat pan and begin searing salmon for about 1-2 minutes. Splash juice of 1/2 lime, salt and pepper, flip it over and do the same. It will begin to get a nice sear and should be ready in 2-3 minutes depending on the “thickness” of the fillet. Try not to overcook it, it usually will in 4-5 minutes.
