For those who were able to have the day off this Monday, I hope you are enjoying….I’m a little under the weather, which means I will eat extra colors (for mood elevation) and extra indulgent (to feed the soul)….it really works! This is what what just happened at brunch.
If this doesn’t do it, I don’t know what will!

Oatmeal Pecan Yogurt Waffles
WHAT
2 cups Rolled Oats
1 banana
1 tsp Baking soda
1-2 tbsp Honey
1/4 cup plain, nonfat Greek Yogurt
3/4 cup unsweetened Almond Milk (or any)
1 tbsp macadamia Oil (or any)
1/2 tsp Salt
1/2 tsp Cinnamon
1 Egg (or 2 egg whites)
1/2 tsp Vanilla Extract
1/4 cup chopped pecans
Toppings of your choice!
I used:
2 heaping tbsp almond butter
Pecan pieces
Strawberries, blackberries, kiwi, raspberries and bananas

HOW
Heat waffle iron.
Grind oats in a blender or food processor to the consistency of flour.
Pulse salt, cinnamon, and baking soda into the mixture.
Mix in banana and the wet ingredients and puree into a smooth batter.
Spray the waffle iron and pour in batter, sprinkling some of the chopped pecan pieces.
Cook until the waffle is ready. Sprinkle your toppings of choice (lots of colorful fruit and almond butter was my choice today! Serve to your loves ones.
