Make Lunch or dinner Pop! Mine was this Fiesta Honey Lime Chicken Power Bowl! I like to call it that because it has the perfect Carbs-to-Protein-to-Fat-to-Deliciouness ratio and it’s so simple and amazing, anyone who LOVES food, macros and cares about eating clean, healthy and making good choices NEEDS in their life!
Fiesta Honey Lime Chicken Power Bowl
1 cup of wild rice, cooked
1 4oz chicken breast
3 oz broccoli
1/2 cup chopped mixed bell peppers
Handful of cherry tomatoes
2 tbsp puréed avocado
1/2 freshly squeezed lime
1 tbsp honey
1 tbsp chopped garlic
Salt/pepper to taste
Cook wild or brown rice per instructions. This is the real deal, I use Lundberg wild rice mix, takes approximately 45 minutes to cook through. Season rice with fresh chopped garlic, salt and pepper.
Steam and grossly chop broccoli. Chop bell peppers and cherry tomatoes. Mix veggies with warm rice.
Mash avocado and season with lime, salt and pepper. If you like it spicy add some jalapeños, why not!! Set aside.
Add seasonings to chicken breast with salt/pepper/garlic powder and Pan sear it. Splash lime juice and honey as chicken tenderizes.
Arrange on top of the rice with the avocado on the side. Add more lime over the top. So zesty, love it! This is the perfect ratio for a meal.
