Hot Chocolate Marshmallow Muffins

Because sometimes you need a treat! But it doesn’t have to be all bad! I’m a big fan of Hot Chocolate and love making it at home as the weather gets cooler! I decided to try for a “solid” option: Hot chocolate cake, both scrumptious and Easy with a side of Guilt-Free. What more could we chocolate lovers ask for!? Kiddos will also love the twist on that! What I did:

Hot Chocolate Marshmallow Muffins

WHAT

1.5 cups any flour, or a combination.
For mine, I used:
1/2 cup flour
1/2 cup almond meal
1/4 cup amaranth flour
1/4 cup ground flax seed

1/3 coconut oil (or oil of choice)
1/3 cup unsweetened applesauce
2.5 oz. bittersweet chocolate, finely chopped
3/4 cup honey
1/4 cup pure cane sugar
1/2 cup natural unsweetened cocoa powder
1 egg, 1 egg white
1/3 cup buttermilk or any milk
1 Tbs. pure vanilla extract
1 1/2 tsp. baking soda
1/4 tsp. kosher salt

Optional:
Use handful of mini marshmallows or 1/2 cup white chocolate morsels

Topping
Coconut whipped cream (may use low fat whipped cream)
Cacao nibs or mini chocolate morsels

HOW

Preheat oven to 350degrees.

Melt bittersweet chocolate either in a microwave or on double boiler.
Mix wet and dry ingredients separately. Add melted chocolate into wet mix. Add dry to wet ingredients. Fold in marshmallows or white chocolate morsels.

Add to muffin tins that are greased with spray coconut oil and bake for 25-30 minutes. Ready when toothpick comes out clean!

Top with coconut whipped cream or whipped cream and cacao nibs. EAT, them HOT, AND if you dare: have a glass of milk alongside! Perfection!
