Not your boring Chicken Salad!
I Meal Prep everyday of my life because I go I work everyday. I have a Desk Lunch because I usually have meetings or workout at my lunch hour, so my meals have to be prepped because I don’t go out for lunch! The key to success with meal prep is: It doesn’t have to be boring. Elevate your chicken salad with pears, pomegranate and cranberries. I’ve been long thinking if putting together an exciting, anti-boring Meal Prepping book, on how I do it and why it works!

This salad is as simple as they come and packed with flavor!


Not your Boring Chicken Salad

4-6 cups of spinach, kale and arugula
12 cherry tomatoes
1 tbsp dried cranberries
1/2 Anjou pear
1/4 cup pomegranate pearls

Salad dressing: blend 1/4 cup pomegranate juice, 1 tsp honey, 1 tbsp lemon juice.

Tip: by making your own salad dressing, you know exactly what is in it! No surprise ingredients, added oils or sugars!
