Healthy White Coconut Flan aka “Manjar dos Deuses”

This One is for Coconut lovers! Manjar Dos Deuses is a well known Brazilian dessert with a coconut milk base and airy flan texture that is just to die for. This is a “healthified” version without condensed or heavy cream but absolutely delicious, and quite easy! Here is how it’s done:

Healthy White Coconut Flan aka “Manjar dos Deuses”

WHAT

1 liter of 2% milk
1 cup of sugar
200g shredded coconut
5 tbsp corn starch (maizena)
200 ml coconut milk
Traditionally: 1 can of prunes and prune juice or thickened sauce but may sub for another fruit you love

HOW

In a sauce pan, heat up the 2% milk and coconut milk, sugar and half of the shredded coconut. Add the corn starch until fully dissolved in the coconut milk at medium heat until it begins to thicken.

Pour water in a 20 cm flan plan or bundt cake pan which traditionally has a whole in the middle just so it is wet as opposed to completely dry. Attention: you are not adding water, you are just making the pan wet. This will allow the flan to set without sticking. You may also use mini flan pans for individual portions. Pour flan mixture in pan and place in refrigerator for approximately 2 hours.

Once set, flip the flan over and pour the prunes with its juices over the top. Sprinkle the rest of the coconut over it if desired. You will absolutely love this!
