Healthy Margherita Pizza Bites


Yay! It’s Super Bowl Sunday! Made Healthy Margherita #PizzaBites! TOO EASY! All ready for the game now! Only 3 steps to the perfect appetizer.Just too easy!
What I did:

Healthy Margherita Pizza Bites

12 single empanada rounds or egg roll squares (either works)
1/2 cup 2% shredded mozzarella
Handful of cherry tomatoes
1/2 cup tomato sauce
Oregano to taste
12 muffin pan

olives (I add them to everything for added taste)
Arugula for garnishing

Preheat oven to 350 degrees F.

Spray muffin tins with Nonstick spray.

1. Arrange empanada rounds (what I used this time), the brand is la salteña oven empanadas. Arrange and mold them to fit in each tin. Bake for 5-7 minutes.

Meanwhile half cherry tomatoes.

2. Take them out and add a bit of cheese to the bottom of each followed by 1 tbsp of tomato sauce, tomatoes, olives and a bit more cheese over the top.

3. Return to oven for another 5-7 minutes until cheese begins to bubble and sides begin to brown. Take it out and add arugula to the top. It should be crunchy yet doughy!
