Healthy Caesar Dressing

Next time they call you boring for bringing salad, show them this!

Here is a healthier way to enjoy the beloved Caesar Dressing without breaking the bad fat threshold and throwing your lifestyle off. Because I keep getting asked how to make a good Caesar dressing out of Greek yogurt (I basically make everything out of Greek yogurt, sooooo, well here it is!

Tangy Caesar made with Greek yogurt, which is just about the most versatile ingredient used to make dressings and sauces! Here it is, especially for the #snapfam who constantly requests! All the flavor of classic Caesar dressing, and no guilt!

A typical salad day for me!

HEALTHY AND EASY CAESAR SALAD DRESSING

What you need:

-½ cup non-fat plain Greek yogurt

-¼ cup grated Parmesan cheese

-2 tablespoons extra-virgin olive oil

-2 tablespoons freshly squeezed lemon juice

-1 teaspoons Dijon mustard

-1 large garlic clove

-1 teaspoon anchovy paste or 1 anchovy fillet (this stuff is potent, the past, so use is sparingly) – this is optional but it does give it that “Caesar” taste but I don’t always use it or have it so don’t let this ingredient stop you from making this delicious #caesarsaladdressing.

No matter what Tupperware you use, it’s still a fabulous salad!

HOW:

  1.  Place all ingredients in a blender or food processor.
  2. Puree until smooth and emulsified.
  3. Use within a week and store in a air tight lid.

Makes 3-4 servings for a single salad, or one large serving for family style salad. Double or triple the recipe, make everyone happy! I put them in small containers to bring them to work as part of my meal prep.

PS: This is a staple salad for my meal prep, and at any given time, it consists of romaine lettuce, spinach, cherry tomatoes, Katamata olives, shredded Parmesan, coarse black pepper, grilled chicken and a slice of lemon for a splash of added tanginess + garlic croutons. Sometimes I add carrots and avocado to change it up.
