Dark Chocolate Banana Blender Cake


If you’ve had my banana blender cake, AND you’re a chocolate lover, you need to try this one! Absolutely delicious and still good for you! Make this for the chocolate lover in your life because yes, it’s still healthy. This is what @winecoach and I will normally have as breakfast muffins. Yum!

DARK CHOCOLATE BLENDER BANANA CAKE

WHAT

  1. 2-3 medium ripe bananas
  2. 1.5 cup any flour (I did a mix: 1/2 cup almond meal, 1/2 cup amaranth flour, 1/2 cup ground flaxseed meal)
  3. ¼ cup natural greek yogurt
  4. 2 tablespoons local honey
  5. 1 egg, 1 egg white (or 3 egg whites)
  6. 1 teaspoon vanilla
  7. 1 tablespoon cinnamon
  8. 2 heaping tbsp unsweetened cocoa
  9. ½ teaspoon baking powder
  10. ½ teaspoon salt
  11. 1 tablespoon of oil (or 1/4 cup applesauce)

OPTIONAL

  • 1 tablespoon of almond butter or hazelnut spread

TOPPINGS

  • ¼ cup dark chocolate chips
  • ¼ cup chopped walnuts


HOW

  • Preheat oven to 350 F.
  • Prepare pan of choice by spraying cooking spray. Blend everything and pour in cake pan, muffin pans or mini tart pans like I did.
  • Pour batter and arrange chocolate chips over the top, or pour half the batter sprinkling chips and nuts in the middle followed by the other half of the batter over the top. You May also fold them into the batter with a spatula or wooden spoon.
  • Gauge your baking time according to the size of the pan you use. If a large pan, Bake for 30-35 minutes (muffins 25-30 minutes) or until toothpick comes out clean.
