Crispy Delicata Squash Rings

I uploaded this recipe yesterday, but something happened and it failed, so I apologize if you’re receiving this in your inbox twice! ANYWAY! Exciting things happening! It’s delicate squash season and I was able to share this recipe on a cooking segment for Show me St. Louis this week! Always a blast with those guys.

You will love these crispy parmesan crusted Delicata Squash Rings! They make for an amazing keto/gluten free (if you skip the bread crumbs), low carb, snack packed with ALL the delicious for a side dish or game day appetizer! These are so amazingly crunchy and yummy you could swear they are fried!

Delicata squash is a variety of winter squash with cream-coloured cylindrical fruits striped in green or orange that are cooked. As its name suggests, it has characteristically a delicate rind with a creamy texture when cooked that packs a lot of taste. My guy Tony Tomato dropped off A LOT of these for me to play with and I’m having a blast!

WHAT

  • 1 delicata squash
  • 1 egg
  • Garlic powder
  • Salt and pepper to taste
  • 3/4 cup grated Parmesan cheese
  • 1/4 cups bread crumbs (optional)
  • Sprinkle of dried oregano
  • Sprinkle of dried basil
  • Marinara sauce or other sauce of your choice
