Colorful Tilapia Dinner

 

This just happened! Mid-week dinner Not too shabby for a Wednesday evening…Tulips and a healthy colorful dinner for hubby and I. Make it healthy, nutritious and delicious. Fish and veggies completely satisfying, believe it or not! What happened here:

Colorful Tilapia Dinner 
2 tilapia fillets 
Juice of 2 limes + 1 lime, sliced
Corn on the cob
Asparagus or green beans
Mixed bell peppers, finely chopped 
EVOO to taste
Salt, pepper
Cherry tomatoes 
Preheat oven to 425F.
On a baking pan, sprinkle EVOO to prevent fish from sticking. Sit fillets down and sprinkle some more EVOO and pour lime juice over the top. I like to squeeze the lime directly on top of the fish, and add salt and pepper to taste. Add lime slices to the top of tilapia. They should bake for about 15-18 minutes until flaky. 
Boil corn on the cob for about 5-6 minutes until tender. Remove from water, either use EVOO or 1 tbsp of butter or ghee and add parmesan cheese, salt and pepper. 
If using green beans, Boil until tender and toss into balsamic vinegar. 
About 10 minutes into baking the fish, add asparagus to the pan so it can mix in with the juices for the rest of the time. Add cherry tomatoes the last 3-4 minutes so it all cooks together. 
Add chopped bell peppers to the top of the fish or toss in EVOO and roast them for about 4-5 minutes. 
I used green beans because it’s a favorite of my husband’s, and Im a fan of asparagus, thus, 2 choices.
