Baked Spaghetti Squash A’la Vodka Sauce

Because on pasta night, the spaghetti squash game was strong! This is great for those seeking a lower carbohydrate dish with the flair of a nice plate of delicious pasta. You can add any topping, sauce or protein you wish.  This just happens to be A’la Vodka, but can easily be enjoyed with any sauce.

   

You won’t miss pasta. Promise. Spaghetti squash is an amazingly delicious alternative, especially if you are plant based or paleo! plus it’s rich in Vitamin A, B-6, C and K as well as folate and riboflavin! In addition, it tastes A-M-A-Z-I-N-G!

Baked Spaghetti Squash a’la Vodka Sauce

WHAT

  • 1 spaghetti squash, cooked
  • 8 oz of chicken breast
  1. 4 cloves of garlic, finely chopped, divided
    1 tbsp EVOO
  2. 1 jar of  vodka sauce
  3. 1/4 cup sun dried tomato
  4. handful of fresh tomatoes, halved
  5. handful of fresh basil, chopped
  6. 2 oz fresh mozzarella
  7. Salt and ground pepper to taste
  8. Red pepper flakes to taste

HOW

  • Preheat oven at 425 degrees F.
  • Place whole spaghetti squash in a baking sheet in the center if oven and bake for 40-45 minutes until you’re able to pierce it easily with a knife.
  • Cut in half, and let cool for a few minutes. Gut out the seeds and with a fork, pick out the squash strands.
  • Sautee the chicken with garlic and EVOO until cooked through. Set aside.
  • Meanwhile, in a medium saucepan, add EVOO and sautée the garlic with the vodka sauce, cooking in moderately low to medium heat. Add sundried tomatoes and allow to simmer for 5-6 minutes. Taste it! Add red pepper flakes , salt and pepper to taste.
  • Add squash strands to the sauce and allow the flavors to marry. Now you have a choice: scoop the strands back to the empty squash shells, or to a plate. If you want the next step, the bake, add the squash to an oven safe dish or use the squash halves.
  • Add chicken pieces, mozzarella and fresh tomatoes to the top of dish and broil on high until cheese is fully melted.
  • Sprinkle ribbons of basil over the top and enjoy immediately.

Makes 4 servings or 2 large servings! We are hungry people!
