Because anytime you make waffles, they should be celebrated! Today was almond butter chocolate and berries! Yes, I do like them well done on the crunch side! These were almost a cookie, but fluffy and soft inside!

Almond Butter waffles
WHAT:
⠀⠀⠀⠀ ⠀⠀
1-1/4 cups oat flour (can use any)
2-3 tablespoons honey or agave
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground cinnamon
1 egg, 1 egg white separated
1-1/4 cups any milk (I used almond)
1/3 cup almond butter
2 tablespoons coconut butter, melted

Hazelnut spread
Berries???

HOW:
⠀⠀⠀⠀ ⠀⠀
Grind oats into flour.
⠀⠀⠀⠀ ⠀
In a large bowl, combine the flour, baking powder, baking soda and cinnamon. In another bowl, whisk the egg yolks, milk, almond butter, honey and coconut butter; stir mixture into dry ingredients just until moistened.
⠀⠀⠀⠀ ⠀⠀
In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron until golden brown. Serve with toppings of choice!
Yields about 8-10 waffles.

I made these waffles today and the batter was too “liquidy” and it didn’t set at all
Mmmm….that’s not good!! Did you follow it exactly? Maybe too much milk?
