S’mores Muffins

  
Back by popular demand, and Because it’s not always safe make a fire, if you LOVE s’mores, you can always resort to baking some S’mores Cupcakes to curb the crave with the healthier version, made simple yet delicious! •.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•.•. .

HEALTHIER S’MORES MUFFINS 

WHAT 

1.5 cups any flour – I used a combo of 1/2 cup flour, 1/2 cup almond meal, 1/4 cup amaranth flour, 1/4 cup ground flax seed

1/3 cup coconut oil (or other)

1/3 cup unsweetened applesauce 

2.5 oz. bittersweet chocolate, finely chopped

3/4 cup honey 

1/4 cup pure cane sugar (if you like added sweetness) 

1/2 cup natural unsweetened cocoa powder

1 egg, 1 egg white 

1/3 cup buttermilk or any milk

1 Tbs. pure vanilla extract

1 1/2 tsp. baking soda

1/4 tsp. kosher salt
Optional Filling:

Use handful of mini marshmallows or 

1/2 cup white chocolate morsels

Topping
Coconut whipped cream (may use low fat whipped cream) or cool whip

Cacao nibs or mini dark chocolate morsels .

HOW
Melt bittersweet chocolate either in a microwave or on double boiler. 
Mix wet and dry ingredients separately. Add melted chocolate into wet mix. Add dry to wet ingredients as you typically should. Fold in marshmallows or white chocolate morsels.
Add to muffin tins that are greased with spray coconut oil and bake for 25-30 minutes. Ready when toothpick comes out clean!
Top with coconut whipped cream, cool whip or whipped cream and cacao nibs. EAT, them HOT, if you’re feeling adventurous have a glass of milk alongside, haha! Perfection and an awesome substitute to regular S’mores as we don’t always have a fire going!
