In honor of Valentine’s Day coming up next weekend, I decided to make hubby Love crêpes for brunch this morning! These are low fat delicious crêpes that won’t break your calorie bank.

Low Fat Strawberries and Cream Crêpes
WHAT
1/2 cup any milk
3 egg whites
1 teaspoon vanilla extract
1/2 cup Any flour
1/4 teaspoon baking powder
Dash salt
1 teaspoons oil (I used macadamia)

FILLING:
2 ounces cream cheese, softened
1/2 cup greek yogurt
1 tablespoons of confectioners’ sugar for sprinkling
2 tbsp maple syrup, divided
1/8 teaspoon vanilla extract
2 cups strawberries
2 tbsp whipped cream (I used coconut whipped cream )
HOW
In a small bowl, combine the first seven ingredients. Cover and refrigerate for 1 hour.
Chop up the strawberries in pieces and mix well with 1 tablespoon of maple syrup. Set aside.
In an 8-in. nonstick skillet, melt a bit of butter or nonstick spray. Stir batter; pour about 2 tablespoons into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack or warm plate. Make 4-5 crepes.
For filling, in a small bowl, beat the cream cheese, yogurt, 1 tbsp maple syrup and vanilla until smooth. Spread 1 rounded tablespoon on each crepe; top with 1/4 cup of strawberry and roll up. Sprinkle with remaining confectioners’ sugar. Add more strawberries over the top and whipped cream. I also finely chopped some hazelnuts over the top. Delicious!!
Yields: 2.5 servings, 5 Crêpes.
