Healthy Red Velvet Whoopie Pies

T’is the season of holiday parties and treats! Impress them all with HEALTHY RedVelvet Whoopie pies! Now becoming a tradition as I score with these every year, especially on the holiday season! No way of guessing how healthy they are because they taste AMAZEBALLZ! Don’t worry, you can sub all the flours for whatever you, have. Enjoy the deliciousness and be happy!

Healthy Red Velvet Whoopie Pies

1 cup Roasted Beet Puree
1 tbs Lemon Juice
1/2 cup Unsweetened Almond Milk
1/4 cup honey or agave
3/4 cup Egg Whites
1/4 truvia or dry sweetener of choice
1 tbs Grapeseed Oil
2 tsp Vanilla Extract
1 tsp Butter Flavor
1 cup Oat Flour
1/2 cup Amaranth Flour
1/4 cup tapioca or Arrowroot Starch
1/4 cup ground flaxseed
1 tsp Baking Powder
1/2 tsp Salt
3 tbs unsweetened Cocoa Powder
1/2 tsp Baking Soda
1 tbs White Vinegar
Optional: 2 tbs Natural Red Food Coloring (like Nature’s Flavors)

Frosting/Filling

1/2 cup cottage cheese
1/2 cup homemade nonfat plainGreek yogurt
1/4 cup honey
1 tsp vanilla extract

HOW

Roast 1 large beet or 2-3 small beets (wrapped in aluminum foil) at 400deg F for 45-60 Min until tender. Let cool and purée with lemon juice.

Cool oven to 350degF.

In a stand mixer bowl, add the beet puree, almond milk, egg whites, honey, truvia, oil and extract. Mix well.

In a medium-sized bowl, whisk together the oat and amaranth flour, starch, ground flaxseed, baking powder and salt, set aside.

In a small bowl, whisk together the cocoa powder and food coloring, add to the stand mixer.With mixer still running, add the dry ingredients.

In a small bowl, add the baking soda and add the vinegar. It will fizz/bubble so don’t be scared. Stir the mixture and pour into the stand mixer bowl. Increase mixer speed to medium and mix for about 10 seconds.

Pour batter into the prepared woopie pans, cupcake tins or into cake pan and bake until center is firm when tapped.

Blend together filling ingredients and let it sit.

Flip cakes onto a wire cooling rack and cool completely. Add filling to whoopies and serve! Will keep well overnight if you want to make ahead. Everyone will love!
