Healthy Pão de Queijo

If you love cheese and bread, this is for you! I’m Brazilian and this is probably the most popular item you will find nationwide, now worldwide! If you know Brazilian Food, you know Cheese Bread aka Pão de Queijo, which is how we call these delicious cheesy balls everyone goes nuts about!

You won’t believe this is the skinny HEALTHY version when you taste it! This is what I did:

Clean “Sweet Potato” Cheese Bread

1 sweet potato, baked or boiled- mashed with a fork

1 cup shredded cheese of your choice (I like cheddar) ***this is a Brazilian adapted recipe so I used Brazilian Minas Cheese that you can’t just find anywhere. I think closest would be a low fat variation of mozzarella or Mexican queso fresco

1 cup low fat ricotta cheese

1 cup special cassava or yucca starch (again I used Brazilian ‘povilho azedo’ not found justeverywhere) the version you can find outside of Brazil.

1 egg and 2 egg whites

HOW

Preheat oven at 350 degrees. Mix all ingredients well and roll up into little balls. Mine yielded 25. Distribute evenly over oven safe dish, be sure to spray with some cooking spray so they don’t stick! Bake for 25-30 minutes. Easy does it! I love it for breakfast with coffee, but it’s great anytime of the day!
