Today’s brunch: because I’m a BIG fan of French toast, for it is simple, satisfying, delicious and can be easily healthified! This is the most basic recipe for a healthy French toast you can make with once frozen or bread that has been lying around. There are many ways to stuff of, but today we kept it simple.

Healthy French toast
4-6 slices of thawed bread
Mix
1/2 cup egg whites
1 tbsp ground cinnamon
1 tbsp coconut palm sugar
1/3 cup milk of choice
1 tsp vanilla extract
Dip your sliced (thawed) bread into the above mix. Heat up a skillet at medium heat with cooking spray, Pan sear for about 30sec-1 minute depending on the thickness of your toast. Get creative! Enjoy with a light dusting of powdered sugar and maple syrup plus fruit!
For my toppings today, I used almond based Dulce de Leche, recipe under ??BrazilianFusion, plus fresh berries and bananas. #brunchitonsundays
