Grandma’s Brazilian Carrot Cake

FOODIE ALERT! Not your typical All American Carrot Cake!

I’m one who usually “skinnifies” and “healthifies” all recipes but not this one.

This cake is NOT low-fat, NOT sugar-free and NOT FAT-free BUT may easily be skinnified!

This is SPECIAL because my grandma gave me permission to share this cake’s recipe, which I’ve been eating since before I knew anything at all!

It is Simply delicious and so so simple! I would, and probably will complicate this recipe here in the near future by making it gluten-free, dairy-free or vegan, but this…this is simply grandma’s cake, unrestricted❤️.

Grandma’s Brazilian Carrot cake

What:

3 eggs
3 carrots, peeled, cut
1/2 cup oil
1 cup sugar
1.5 cup flour
3 tsp baking powder

What you do:

Mix wet ingredients and carrots, and then add the dry. I remember her doing it by hand, but now she has been using a blender.

Grandma said to bake on “medium heat” which I’m assuming is 350deg. She also very scientifically said “until it’s done”, and since I was watching her, that meant about 40-45min or until the toothpick comes out clean.
