Grab and Go Egg Muffins

Took a big bite! ? I always do that! What is this? Brunch on the go! Perfect for road trips or when you have no time to waste! Whipped up quick 20-minute ? Egg-a-licious muffins that are practical to take On-The-Go and enough to hold you up for 3-4 hours! EASY?! Here is What I did:

GRAB AND GO EGG MUFFINS

2 eggs, 3 egg whites (or 5 eggs)
Handful baby ? spinach, chopped
4 fresh basil leaves, chopped
1 oz sun dried tomatoes, chopped
1 oz goat cheese, crumbled

Optional:
4 strips of prosciutto
1 heaping tbsp chopped green chile

HOW

Preheat oven to 350F.

Beat eggs and season lightly with salt and pepper.
Use cooking spray on 4 large muffin or 6 regular muffin tins. Place the prosciutto strips on the bottom of muffin tin.

Pour egg mixture halfway, sprinkle spinach and basil evenly, then goat cheese, pour the rest of egg mixture and add tomatoes over the top.

Bake for 20-25 min until center is set.
