It’s lunch time and you’re at your desk again…swamped with work. It happens. It’s also my reality somedays. I usually try to get a workout in at lunch but some days are just impossible. It’s also a trap for grabbing unhealthy food and using the fact that you’re busy to make the wrong choices.
I’m all about preparing fresh foods for the office. I have a mini fridge that is always stocked up! It’s funny because it seems like I live at work, and my co-workers often joke with me because I have more options in my work fridge than many do at home, but priorities are priorities, and nutrition is a big one for me! Plus I like to eat, so NO BRAINER there!
Here are 3 simple salad options to which you can add a protein of choice (Tofu, grilled chicken, steak, fish, eggs) and have a healthy, fresh and nutritious lunch (Not to mention Delicious!) I find that salad will keep well in the fridge for up to 3 days, so I don’t prepare it individually like this for longer than that. It will stay fresh and you can just add the protein of choice that same day.

Option #1: Tropical Salad
Spinach and Arugula Mix
Tangerines
Mangoes
Cherry Tomatoes
Mini Avocado Half
Option #2: Very Berry Salad
Spinach and Arugula Mix
Mixed Cherry Tomatoes
Strawberries
Blueberries
Blackberries
Silvered Almonds
Dried Cranberries
Kalamata Olives
Goat Cheese crumbles
Option #3: Mediterranean Savory Crunch
Spinach and Arugula Mix
Baby Carrots
Mixed Cherry Tomatoes
Kalamata Olives
Feta cheese
Mini Avocado Half
This is my Monday, Tuesday and Wednesday this week. I think today I’ll go with option #2 with a side of Lox. Now, which would you prefer?
