Amazing Sugar-Free fresh BLUEBERRY SAUCE!
Awesomeness that was so amazing I surprised myself! These were so sweet you can skip all that sugar regular jams call for! Poured over one of my favorite pancakes and voilá :The perfect Brunch It On Sundays meal. Get inspired!
This is what I did:
HOMEMADE SUGAR-FREE BLUEBERRY SAUCE
WHAT
2 cups fresh blueberries (or frozen)
1/4 cup water
1 cup fresh orange juice
1/4 cup local raw honey
1 tbsp fresh lemon juice
1/8 teaspoon ground cinnamon
Optional if you are short on time:
2 tablespoons cornstarch
1/4 cup cold water
HOW
In a saucepan over medium heat, combine the blueberries, 1/4 cup of water and orange juice. Stir gently, and bring to a boil. Add honey. Simmer for 20-25 minutes to your preferred thickness.
Medium white star️If you don’t have that much time Black right arrow️In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes.
Remove from heat and stir in the lemon juice or lemon extract and cinnamon. If too thick, Thin sauce with water to your liking. Enjoy these and pour this Blueberry Sauce on anything!
COCONUT BUCKWHEAT PANCAKES
2 eggs
1 1/2 cups all-purpose flour, sifted
1/2 cup whole-ground buckwheat flour, sifted
1/4 shredded coconut
2 tbsp coconut nectar or honey
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1.5 cups any milk
2 Tbs.coconut oil
1/2 tsp. vanilla extract
HOW
In a bowl, using an electric mixer or whisk, beat the eggs until frothy. Add the flours, the baking powder, baking soda, salt, milk, oil, honey/nectar and vanilla and stir just until smooth.
Heat a griddle over medium-high heat. Lightly grease the griddle with oil or spray with nonstick cooking spray. Use about 1/4 cup batter for each pancake. Cook until bubbles form on top of the pancakes and the batter is set, 1 to 2 minutes. Flip the pancakes and cook until golden brown on the other side, 2 to 3 minutes. Transfer to a baking sheet and keep warm in the oven while cooking the remaining pancakes. Top coconut pancakes with the Homemade Sauce and love it!
