Chocolate Stuffed Sweet Potato Muffins

HEALTHY “Nutella” stuffed chocolate sweet potato muffins!

These just out of the oven! Healthy Double Chocolate Muffins! Judging by its taste, you’ll never guess what’s in them! These are delicious, just the right amount of sweet and chocolatey, and made in 2 steps. So EASY and HEALTHY! What I did:

Healthy Chocolate Stuffed Sweet Potato Muffins
1 medium sweet potato, baked, peeled

3/4 cup whole wheat or oat flour

1 egg, 1 egg white

2 heaping tbsp Greek yogurt 

2 tbsp honey/agave or maple syrup

2 tbsp unsweetened cocoa powder

1 tbsp macadamia oil

1 tsp baking powder 

1/2 tsp baking soda

1/4 cup healthier hazelnut chocolate spread such or Nutella/Hershey’s chocolate spread
Filling

A few more tbsp of chocolate spread for “dolloping” 
Optional

1/4 cup sliced almonds
HOW
Preheat oven to 350F.

Prepare muffin pans with nonstick oil spray.
Step 1: Add all ingredients in a high speed blender until a creamy smooth batter is formed. 
Step 2: Fill muffin tins 1/3 of the way, add a dollop of hazelnut chocolate spread (and sprinkle sliced almonds if you’re using them), and fill tins to about 3/4 of the way.
Bake for approximately 20 minutes until the toothpick comes out clean. Enjoy with milk, coffee, tea or by itself! These are delicious!
