Chicken Enchilada Fettucini

Not your conventional #CreamyPasta ! This one has a Southwest kick and a taste that is sure to wake up your senses! What I did:

Healthy Chicken Enchilada Fettucini

5-6 Oz cooked Chicken Breast, cubed
2 cups Green Enchilada Sauce
5-6 Oz gluten-free @capellos fettucini
1 tbsp Chili Powder
1 tbsp Paprika
1 tbsp cumin
1/4 cup Green Chili, chopped
1/4 cup, chopped Red Onions
Cilantro to taste (I like ALOT)
1 Roma Tomato, chopped

Optional: 1/4 cups, shredded low fat Mexican Blend Cheese

HOW:

Cook fettucini to instructions.

In a sauce pan, sautée onion in a large pan with a little bit of Olive oil. Pour in enchilada sauce, green chili, and seasoning to taste. (If you want it on the spicy side, use the given measurements). Taste the sauce as you go, it’s your power!

Add some finely chopped cilantro and Mix up the sauce. Add cheese slowly until it incorporates well in the sauce. Stir in the fettucini.

Add in chopped chicken, and sprinkle more cilantro and chopped tomatoes over the top.
