Brazilian Papaya Cream or “Creme De Papaya”

Papaya is an amazing fruit that aids in digestion and is the perfect dessert after a large meal! The enzyme papain helps to break down tough meat fibers and it comes to no surprise this dessert is heavily suggested after a typical Rodizio in a Typical Brazilian restaurant, to assist with good digestion so you can actually get up off your chair after such a meat fest!

This is a healthy, quick, and delicious dessert you’ll want to make for you and your friends, whether or not you need help with digestion! Who doesn’t?

Brazilian Papaya Cream with either Cassis Licqueur or Strawberry Coulis

WHAT

For the Papaya Cream:

2 cups ripe papaya, peeled, deseeded and cubed.
2 scoops good quality vanilla ice cream OR frozen yogurt/coyo (I like using vanilla bean ice cream.
2 tablespoon cassis cream (liqueur made of black currants) or berry coulis or top it off with berries.

For the Berry Coulis:

⅓ cup blackberries (fresh or frozen)
⅓ cup raspberries (fresh or frozen)
⅓ cup strawberries (fresh or frozen)
4 Tbsp powdered sugar or sugar substitute ideal for cooking
1 cup water
Juice of ½ lemon

HOW

To make the papaya cream:
In a blender, blend well the papaya with the ice cream until obtaining a creamy mixture. Reserve.

Pour 1 Tbsp cassis cream liqueur or berry coulis into each tall chilled dessert cup, swirl, and top with the papaya cream (or simply serve the plain papaya cream with berries on top).

To make the berry coulis:

How to make the coulis: Place the berries, sugar or sugar substitute, and water into a saucepan. Bring to a boil, then simmer for 5 – 10 minutes or until the fruits are soft. Stir in the lemon juice, remove from heat, and cool slightly.

Purée in a blender or food processor; then, strain through a sieve, rubbing it through with the back of a ladle or spoon. Refrigerate.

Decorate and serve immediately. Try this! I absolutely adore it! Enjoy!
