Easy peasy 1 step citrus sensation of a mini cake! Have your house smell of goodness with this one step, healthy, quick and easy treat for breakfast, snack or dessert! It’s also a great base for other toppings you may prefer.

Blueberry lemon squares
WHAT
1.5 cup oats
¼ cup ground flax seed
½ tsp baking soda
½ tsp baking powder
Pinch of salt
¼ cup yogurt
2 tablespoons local honey
3 egg whites
1 teaspoon vanilla
¼ tbsp cinnamon
Juice from 1/2 lemon
Zest from 1 lemon
½-1 cup or fresh blueberries
HOW
Preheat oven to 350 F.
Prepare pan by spraying cooking spray. Blend everything in a blender except blueberries and lemon zest; pour in prepared pan. Fold in lemon zest and blueberries leaving some additional berries to sprinkle over the top. Bake for 20-25 minutes or until you do the toothpick test and it comes out clean!.

Would you recommend to use an oil or not? Did you? I ask because it says optional but I have never seen that instruction in a recipe before!
Some people have an aversion to oil and substitute it for applesauce or such. I do use it and believe it ads to the texture.

Depends on muffin pan, it yielded 8 squares but will do 10-12 muffins

I’m sorry it didn’t turn out exactly this way. You can try a different flour? Or separate the eggs and bring egg whites to fluffly white peaks (fold in egg whites to the batter after) to get a more aerated muffin. Sometimes oat muffins do come out a bit “denser” than regular flour ones though.
I dont understand how yours come out so yellow. Becauase of the oats mine are brown. It was also hard for me to blend in my ninja blender so it came out a little oaty. What am i doing differently
Mmmm….not sure Kaytie. Maybe it is the blender. Why don’t you try with oat flour or another type of flour? You can do that ?
