Banana Oatmeal Yogurt Waffles

You have ALL these ingredients at home! You can easily recreate this!?.

Brunch is what we do on weekends! This happens to be Super SIMPLE, healthy and delish! We just had it this morning for #BrunchItOnSundays
and are happily digesting awesomeness. Here is what I did!

Banana Oatmeal Yogurt Waffles

What

2 cups Rolled Oats
1 banana
1 tsp Baking Soda
1-2 tbsp Honey or agave
1/4 cup plain, nonfat Greek Yogurt
1 tbsp melted Coconut Oil
1/2 tsp Salt
1/2 tsp Cinnamon
3/4 cup unsweetened Almond Milk
1 Egg
1/2 tsp Vanilla Extract

Toppings:
Pecan pieces
Mixed berries
Almond butter
Maple syrup

HOW

Heat waffle iron.
Grind oats in a blender or food processor to the consistency of flour.
Pulse salt, cinnamon, and baking soda into the mixture.
Mix in the wet ingredients and puree into a smooth batter.
Spray the waffle iron and pour in batter.

Cook until the waffle is ready. Cut them in half. Spread almond butter
In between layers, top with maple syrup and sprinkle pecans and berries over the top.

Enjoy it yourself or Serve to your loved ones. As usual, serves 3-4 or 2 very hungry people, hubby and I!!!
