This, all of us Brazilians are familiar with. Our Corn Bread which is more of a Corn Cake, appreciated with a nice cup of coffee and on the sweet side, is perfect for morning or afternoon and just fills your home with a delicious aroma worth sharing with your neighbor. I posted my grandma’s original recipe a few weeks ago (see a few posts ago down my feed) and decided to make the healthier version this morning. I was concerned it wouldn’t turn out but it tastes amazing, so here it is!

Healthy Caramel Brazilian Corn Bread aka “Broa De Milho”
3 eggs
1/4 cup oil
1/4 cup Greek yogurt
1/4 cup sugar
1/2 cup honey
1 1/2 cups of corn meal
1 cup whole kernel corn
3/4 cup of any milk
2 tbsp ground flaxseed
1 tsp baking powder
Pinch of salt
Optional:
1/2 cup shredded cheese OR
1/2 shredded coconut (I used 1/4 cup of each and to me it was perfect)
HOW
Preheat oven to 350F.
Mix all ingredients in blender except whole kernel corn.
Once batter is smooth and homogenous, add corn and optional grated and/or shredded cheese and coconut. Pour in min bundt cake pan, or muffin or cake pan.
Bake for 30-35 minutes or until toothpick comes out clean. Let it sit for a good 10-15 minutes before enjoying. I still have my Brazilian #DocedeLeite, so I drizzled some over the top because….it’s Sunday. And I wanted to enjoy it to the fullest!
