Healthy Valentine’s Tartlets

Who doesn’t love treats!? On Valentine’s weekend we go above and beyond, so here are some tartlets made with love, from me to hubby and to all of you as well! There are 2 varieties that are garanteed to please. Please share which one is your favorite once you make them! Here is what I did:

?Valentine’s Tartlets

WHAT

12 single empanada rounds or egg roll or wonton squares (either works)
Round cookie cutter ring
Tart pan (mine has 12 tart tins)

Fillings

Very Berry Cheesecake tartlets

2 heaping tbsp low fat cream cheese, softened
1 tsp vanilla extract

4 tbsp blueberry jam/jelly/sauce – find my homemade blueberry sauce

Fresh berries for decorating
Optional: confectioner’s sugar for sprinkling

Nutty Chocolate Banana Tartlets

2 heaping tbsp of cream almond butter
2 tbsp hazelnut spread
1/2 banana
2 strawberries
Optional: Cinnamon for sprinkling

ASSEMBLING:

Preheat oven to 350F.

Use nonstick spray to grease tart tins.

Cut empanada dough into perfect circles using cookie cutter.

Layer dough over tins pressing them down to take the shape. Place in oven for about 5 minutes to begin baking process.

I’m the meantime, make the filling for the cheesecake tart.
Mix the softened cream cheese with vanilla extract.

Once the tartlets bake for about 5 minutes, remove them. There should be 10 or 12.

Distribute the cream cheese mixture to 6 tartlets, followed by a dollop of blueberry jam (checkout my homemade recipe) and top with fresh berries very Berry Cheesecake tartlets.

On the other tartlets, divide the almond butter and hazelnut spread evenly among them. Top each with 1 slice of banana and one slice of strawberry to make the Nutty Chocolate Banana Tartlets.

Put back in the oven for about 6-7 minutes or until the borders begin to brown and the filling is visibly melting.

Remove the tarts from the oven and let them sit for 5-10 minutes.

Optional: Sprinkle cinnamon over the nutty chocolate banana tarts, and confectioner’s sugar over Berry cheesecake tarts.
