One Step Salted Caramel Pecan Oat Muffins
⠀⠀⠀⠀ ⠀
WHAT
⠀⠀⠀⠀ ⠀
2 cup oats or flour of choice
¼ cup ground flax seed
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon of salt
¼ cup almond meal
⠀⠀⠀⠀ ⠀
¼ cup yogurt
2 tablespoons honey or maple syrup
1 egg, 1 egg white
1 teaspoon vanilla
1/4 cup any milk ⠀⠀⠀
1 tbsp macadamia oil⠀ ⠀ ⠀⠀⠀⠀ ⠀
Toppings
¼ cup caramel or dulce de leche (or check out the blog www.colorfulfoodie.com for the recipe for dairy-free homemade almond dulce de leche)
½ cup pecan pieces and some full pecans ⠀⠀⠀⠀ ⠀⠀⠀⠀ ⠀
⠀ ⠀⠀⠀⠀
HOW
Literally blend all ingredients together (except for toppings), prepare muffin pan with cooking spray.
Preheat oven to 350F.
Fill 10 muffin molds about 1/3 of the way. Sprinkle pecans and about 1/2 tbsp of caramel/dulce de leche on the center of each muffin mold. Fill the rest of the molds up and sprinkle rest of pecans over the top. Bake for about 20 minutes or until wooden toothpick comes out clean. Enjoy!
