This was a Happy birthday cake in honor of all July Babies , but surely it could be adapted to any month of the year. My birthday is on the last month of July so this is how I chose to celebrate it! Now I have the honor of sharing my favorite cake with you! I have skinnified of course, and this is the HEALTHY version of my usually drunk Chocolate Cake! Be sure to tag a chocolate lover ! You will want to try this one, trust me!
KAHLUA AND COFFEE ️ CHOCOLATE CARAMEL CAKE
WHAT:
1/2 cup oat flour
1/2 cup whole wheat flour
1/4 cup flaxseed meal
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
3 tbsp coconut oil
2 eggs
1 teaspoon vanilla extract
3-oz package instant choc pudding
3/4 cup strong coffee
1/4 cup Creme de cacao or hazelnut licquor
1/4 cup kahlua
Optional:
Dark chocolate chips
melted caramel
HOW️:
For the cake, combine flour/powders oil, pudding mix, eggs, coffee, Creme de cacao, and kahlua in large bowl. Beat all ingredients until smooth. Pour into a greased cupcake or cake pan. Fold chocolate chips if you so wish. Bake 25-45 min depending on your cake pan and oven at 350 degrees. Remove from pan and invert onto a cake plate.
Optional: Punch hikes throughout the cake with a skewer or ice pick and spoon more kahlua over the top if you want “drunk cake”. Otherwise, pour caramel over it and enjoy!!
