HEIRLOOM TOMATO QUICHE – Light and delicious!
Looks like a pizza but NOT a Slice of pizza! I’m Still in love with the multi-colored heirloom tomatoe varieties these days! These I found at the Farmer’s market in Chickasha, OK! What better way to incorporate these beauties then in a beautiful quiche! If you haven’t yet, I highly encourage you to make for the family for breakfast, lunch or dinner because it is super versatile!#BrunchItOnSundays any day or any time of the week! This is what I did:
Heirloom Tomato Gouda Quiche
WHAT
6 eggs (or 3 eggs, 3 egg whites)
2 heaping tbsp Greek yogurt
1/3 cup any milk
1/8 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon ground nutmeg
2-3 ounces gouda cheese, or cheese of choice, shredded
Green, red and orange slices of heirloom tomato
Handful of fresh basil, chopped
1 (9 inch) whole wheat unbaked pie shell
Optional: 2 Oz of ham, turkey or bacon chopped and added to the mix if you want an extra protein
HOW
Preheat oven to 425 degrees F (220 degrees C). Place the unbaked pie shell over the the pie pan and bake for 15 min. In the meantime prepare the filling.
In a large bowl, whisk together eggs, yogurt and milk. Season with salt, white pepper and nutmeg. Add basil to the mix. Place half of shredded Gouda in the pie shell. Add the rest of the cheese to mixture. Now is the time to whisk in optional protein (or not). Pour egg mixture over cheese.
Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C), and bake for 25-30 minutes, or until crust is golden and filling is set. Allow to set 5 to 10 minutes before serving.
