Buttermilk Dulce de Leche Pecan Waffle

Buttermilk Bacon Dulce de Leche Pecan waffles

WHAT:

For the Waffles
1.5 cups all-purpose flour
1/2 Tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp brown sugar
1/3 macadamia oil, or other
2 large eggs
1 teaspoons vanilla extract
1½ cups buttermilk
4 slices of bacon
1 tbsp of brown sugar
1/2 cup roughly chopped pecans
1/4 cup dulce de leche, warm

HOW:

To make the Bacon: Preheat oven to 375 degrees F. Spray a baking sheet with non stick cooking spray and line with foil. Arrange bacon in a single layer on the baking sheet. Sprinkle generously with brown sugar. Bake until sugar is caramelized and bacon is brown and crispy, about 10 to 15 minutes. Remove from oven and place them on a cutting board. Once cooled, chop them into bite size bits and set aside.

Preheat waffle iron.

In a large bowl combine flour, baking powder, baking soda, salt and brown sugar. Whisk to blend. In a medium bowl, whisk together eggs, oil, buttermilk and vanilla extract. Add the wet ingredients to the dry ingredients and fold. Once almost fully incorporated, add 1/2 the bacon and 1/4 of pecan pieces and stir.  Mix only until most of the dry ingredients are moistened in the batter; like pancakes, it’s good to have a lumpy batter.

Cook according to your waffle machine instructions. Will make 4-6 waffles depending on what machine you have.

Layer waffles with 1 tbsp or dulce de leche in between each “sandwich”. Sprinkle bacon the other 1/2 of the bacon on top. This will make 2 waffle sandwiches. Add a fair amount of whipped cream on top, sprinkle chopped pecan and drizzle the rest of the dulce de leche on top. OMG. This is one of the best combos I’ve ever had IN MY LIFE. I hope you make it!
