Brioche Brunch

   

Just enjoyed this wonderful Brioche Brunch with my love WineCoach! I love brioche and all its delicious buttery glory. It’s a treat for me and I allow it every couple of months because….ya gotta live a little!! 

This French toast doesn’t need much! The mixture is quite simple; these are the ingredients:

Brioche Berry Stuffed French Toast:

WHAT

4 slices of brioche bread

2 cups mixed berries

2 tbsp mascarpone or low fat cream cheese (at room temperature)

2 tbsp hazelnut spread, warm (or nut butter)

1/4 cup maple syrup, warm

For the FRENCH TOAST mixture:

1/2 cup egg whites

1 tbsp ground cinnamon

1 tbsp coconut palm sugar

1/3 cup milk of choice 

HOW

Whisk together all French toast mixture and set aside. Cut slices of brioche bread evenly. Use 1 tbsp of butter in a frying pan or griddle in medium heat. Dip the bread into mixture and place in frying pan. Until golden brown. Flip bread over in about 3-4 minutes. It will be done when both sides are golden brown. 

Preheat oven at 350F.

Spread room temperature mascarpone on 2 of the slices. Layer with sliced strawberries or other berries you prefer. Top with warm hazelnut spread. Place other brioche slices over the top. Place in oven for about 3-5 minutes. Remove and add more fresh berries. Drizzle maple syrup over the top. Serve with whipped cream and silvered almonds.

For the Avocado Goat Cheese Brioche Toast

WHAT

2 brioche slices

1/2 avocado, sliced

2 eggs, poached 

Cherry tomatoes 

1 oz goat cheese crumbles

Salt, pepper and herbs de province herbs 
HOW

Lightly toast 2 brioche slices. 

Add 1/4 avocado on each toast.

 Sprinkle goat cheese crumbles evenly. 

Poach 2 eggs for 3-4 minutes. 

Add spices over the top and enjoy! Serve with fresh cherry tomatoes!

  

Poaching is easy!

Boil  4 cups of water in a small saucepan. It should be at least 3-4 inches from the bottom. Add 1 tbsp of vinegar of choice. I use apple cider vinegar.  Swirl the water around and crack an Egg directly into water. You may crack the egg in a ramekin first to ensure it doesn’t break. Cover pan and Remove from heat. Let it sit for 3-4 minutes. I found that 4 minutes allow for perfect poach! Remove with slotted spoon to drain exceeds water. Place on top of your toast and enjoy! It sounds easy because it is!
