Avocado Pasta in the making!

Avocado Zoodle Fettuccini

WHAT

2 Oz of brown rice Fettucini
1 zucchini, spiralized A blade

1 1/2- 2 haas avocadoes, peeled
1/2 cup any milk
1/2 onion, finely chopped
2 garlic cloves, finely chopped
1 fresh bunch cilantro
1/2 lemon, squeezed juice
Salt and pepper to taste

Optional:
1/2 jalapeño (if you like it hot)
grilled chicken
1 Roma tomato, chopped

HOW

Cook fettuccine to package directions. Spiralize zucchini into zoodles and set aside till the very end. If adding chicken, now is a good time to start grilling it.

Blend avocado, onion, garlic, jalapeño (if you like it hot) and cilantro leaves in food processor or high speed blender until smooth. Transfer all to sauce pan and add milk slowly as you stir. May add more or less depending on desired consistency.

Season sauce with salt and pepper to taste, and then add Lemon juice. Mix in cooked Fettucini and let it soak up the saucy goodness. Add zoodles and let them sit for 2-3 minutes. Plate, Add chopped tomatoes and grilled chicken.
