I’ve been craving brownies for a couple of week so I finally got around to making a batch, with CARAMEL! Yes, they are stuffed and shameless. The brownie batter is absolutely guilt-free and my house smell AMAZING! Here is what I did.
CARAMEL STUFFED BROWNIES
WHAT
- 2 eggs (or 1 egg, 2 egg whites)
- ¼ cup honey or maple syrup
- ¼ cup coconut sugar
- ¼ – ½ cup unsweetened chocolate morsels
- ¼ cup cacao or unsweetened cocoa powder
- ½ cup flour (I used almond flour)
- ¼ cup flaxseed meal (ground flaxseed)
- 2 tbsp strong coffee
- ¼ cup nonfat Greek yogurt
- ¼ tsp salt
- ½ tsp baking powder
- 1 tsp baking soda
- ½ cup coconut oil
- 1 tsp vanilla extract
- ¼ cup caramel (I used la lechera dulce de leche)
HOW
Preheat oven to 350°.
- Melt coconut oil and chocolate morsels together in microwave or stovetop.
- Combine eggs, greek yogurt, honey and vanilla together in a bowl; add melted chocolate followed by coffee and stir.
- In a separate bowl, combine baking soda, sugar, cacao, almond flour, flaxseed meal, and salt.
- Pour wet ingredients into dry ingredients and stir everything together.
- Prepare a brownie or square muffin pan with baking spray. Pour half the batter if using a full 8×8 square pan. I used an individual square muffin pan so only I only poured 1-2 tbsp of the batter into pan. If you want to “stuff” the brownie, you’ll need leftover brownie batter to go over the top.
- Add a half tbsp (or full tbsp.) or a dollop of caramel into each muffin square and spread and cover with another tbsp. of brownie batter. If using 8×8 pan, add caramel to 1/2 browie batter, smoothe it out and top off with leftover batter over the top.
- Bake for approximately 25-30 minutes if using an 8×8 pan or until edges have hardened and center has set. If using a square muffin pan like I did, bake for no longer than 22 minutes.
- Allow 10 minutes for brownies to cool before taking a bite and experiencing the ooye gowey-ness. Feel free to drizzle over some more caramel for added indulgent.
Realize that adding the caramel will increase the calorie and fat content and the brownie along is quite tasty and healthy so you might want to skip out of the goowey center. Otherwise, drizzle away. Enjoy my friends!
