Grandma’s Lime Cake

 

Bolo de limão da vovo mamãe!! My mom makes me cake everytime I come to visit – this time it was lime cake and the recipe is finally here! Both my mom and grandma love making citrus cakes, and I myself have grown to love and make! Of course, as good Brazilians, we always have our cake with coffee, either for breakfast, or afternoon coffee (yes, that’s a thing). She also got me this cute little heart cup for “Colorful Foodie“, her words, not mine. Here is how to make the lime cake that has the whole family talking, and it will have yours too when you make it!

Grandma’s Lime Blender Cake  “O Bolo de Limao da Vovó”

WHAT

  • 2 eggs
  • Juice of 1 lime
  • 2 tbsp of lime zest
  • 3/4 cup oil
  • 1 cup sugar (we used 1/2 cup)
  • 1 1/2 cup of flour
  • 3 tsp baking powder

HOW

  1. Preheat oven to 350F. Blend all ingredients in a blender. Pour all in prepared pan.
  2. Allow it to bake for about 35-40 minutes until golden brown.
