Zoodle and Spaghetti Mix in a creamy pesto sauce

 

You can’t even see the ZOODLES! Zoodles are spiralized zucchini noodles made with a spiralizer. More on that later, BUT HERE, they mixed and matched with Spaghetti brown rice spaghetti to add nutritious value and flavor! Zucchini Noodles mimic pasta in a luscious way, and adding it to spaghetti will trick your pickiest of eaters! Try this on your kids, husbands or even YOU, who is not fond of veggies. You will be surprised how good these taste paired with the perfect sauce and more veggies. VoiláFace savoring delicious food! What I did:
ZOODLE SPAGHETTI IN A FIRE ROASTED TOMATO CREAMY PESTO

WHAT

Spiralize 2 zucchinis with spaghetti (I use paderno spiralizer)
2 Oz brown rice spaghetti, cooked

FIRE ROASTED TOMATOES
1 cup red Tomatocherry tomatoes, roasted
2 garlic cloves, smashed
Salt and pepper to taste
Optional: red pepper flakes

CREAMY HEALTHYHerb PESTO

2 cloves garlic
2 cups fresh Basil
1/2 cup chopped kale
2 tbsp pine seeds
Sea Salt and ground black pepper to taste
1/4 cup Olive Oil (high quality!)
1/2 cup cashews, soaked 2-4 hours
1/2 cup any milk, I used almond unsweetened

HOW TO:

While cooking the pasta and spiralizing the Zucchini noodles, place all halved Tomato cherry tomatoes at 425F and roasted over 1-2 tsp EVOO and 2 smashed garlic cloves, salt and pepper to taste. Takes a good 15-20 min to sizzle! Roasting really beings out the flavor! Sprinkle with red pepper flavor to get that amazing firey taste!

While that’s going on, make the HEALTHY Herb pesto:

Except for oil and milk, Mix all in ingredients in food processor. Add oil slowly. Move to sauce pan and slowly add unsweetened almond milk (or any milk)

Add cooked Spaghetti pasta to sauce, and then zoodles. Add roasted tomatoes over the top and enjoy immediately. Sprinkle parmesan over the top if you’re a cheese lover!!
