Yogurt Waffle Sticks and Dulce de Leche

     
Because waffle sticks are fun and can be served as finger food or even as dessert! Don’t get it twisted thought, these make swell full sized waffles and I made those as well. The point is, no matter the shape, you can make these for breakfast, brunch or dessert. So delicious and I know you’ll love it! Here is how I made these:

  
Dulce de Leche Yogurt Waffle Sticks

WHAT:

For the Waffles

Dry Ingredients

  • 1.5 cups any flour (I substituted for a mix of the 3 below)
  • 3/4 cup garbanzo flour
  • 1/2 almond meal
  • 1/4 flaxseed meal
  • 1/4 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1 1/2 cups nonfat Greek yogurt
  • 1/2 cup milk of choice, I used a coconut almond mixture
  • 1/4 cup honey, or maple syrup, or agave
  • 2 large eggs (or 1 egg and 2 egg whites)
  • 1/4 cup coconut oil, or oil of choice
  • 1 teaspoons vanilla extract

Toppings

  • 1/2 cup roughly chopped walnuts or pecans
  • 1/4 cup dulce de leche, warm for layering, drizzling and dipping
  • Fresh berries

  HOW:

  1. Mix together all the dry ingredients in a bow.
  2. On a separate bowl, mix the yogurt and milk together. Stir in eggs, one at a time, followed by the vanilla, honey and coconut oil.
  3. Add wet mixture to dry mixture and mix thoroughly. Batter should be thick, but if too thick you may add some more milk. Watch the video to see true consistency.
  4. Preheat waffle stick maker or regular waffle maker. These are good in any size, but bite sized are just more fun! Cook according to your waffle machine instructions. Will make 4-6 waffles depending on what machine you have.

  

Use the dulce de leche as a dip for your waffle sticks or to layer waffles. If you want to get creative, you can add bacon slices and ducks de Leche in between a stack of waffle sticks! 

  
I like to top it off with a fair amount of whipped cream on top, sprinkle chopped pecan and drizzle the rest of the dulce de leche on top. OMG. This is one of the best combinations of flavor. I hope you make it!
