Tilapia a l’Orange and Spaghetti Squash

  

Impromptu dinner for @WineCoach and I! Really, literally, what was lying around and needed to be eaten. Thankfully ended up being a healthy choice and pretty darn delicious! Simple to make as well! This was especially fun because it was my first recipe posted to #SnapChat – Username: @AnaSandee. Fun!

Tilapia a l’Orange and Spaghetti Squash
WHAT
1 medium spaghetti squash
Juice of 1 lemon

1/2 orange, sliced

Salt and pepper to taste

1/4 cup Olive oil (I used orange infused) + 2 tablespoons
1 head of broccoli, steamed 
4 tilapia fillets 
Optional:

2 tbsp fresh Parmesan rasps

HOW

Preheat oven to 400F. Stab the surface of your squash (all over) with a fork and place in the center of oven on a baking pan/sheet. Allow to cook for approximate 40-45 minutes until you can cut through the squash easily with a knife. Cut in half and gut the squash removing the seeds. “Work” the squash with a fork until it resembles spaghetti (the fun part, I think). To each half, add 1 tbsp of olive oil, salt and pepper to taste. Add 1 tbsp of Parmesan on top. 
Arrange tilapia on aluminum foil and drizzle with 1/4 cup olive oil over filets as well as lemon juice. Use salt and pepper to taste and arrange orange slices over each filet. Bake for approximately 12 minutes or until flaky.
Arrange tilapia over squash, with a side of broccoli. I like to add a bit of balsamic vinegar over my broccoli. Enjoy!
