Super Food Brownies

Everyone deserves a little love on their birthday! Today is a sweet friend’s birthday, so I made her delicious Brownie Bites, conscious size, no guilt involved! Just try not to eat all 36 of them!

These are High Protein Low Fat SUPER FOOD brownies ?with a hint of coffee ☕️ That are Pretty much gonna blow your mind! YEA! What I did:

SUPER FOOD ? BROWNIES

1 (14 oz) canned low-sodium black beans, rinsed, drained OR 2 ripe bananas
2 large eggs (or 1 egg, 1 egg white)
1/2 cup cocoa powder
1/2 cup honey or agave
1/4 teaspoon coconut oil
1/2 cup applesauce
2 tablespoon coconut, or any milk
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon of freshly ground coffee or instant coffee
1/2 cup semisweet chocolate chips, divided
Optional: 1/4 cup cacao nibs and
1/4 pecans for sprinkling

HOW:

Preheat the oven to 350 degrees F. Grease a 9 by 9-inch square brownie baking pan or a mini brownie pan.

In a blender, puree the beans with the oil. If you’re using banana, Mash them and add to coconut oil. Add the eggs, cocoa, honey, applesauce, milk, coffee, baking soda and powder. Blend on medium-high until smooth.

Fold in the chocolate chips.
Pour into the prepared pan. Bake until the edges are done and still a bit shiny in the middle, about 25-30 minutes. Let cool at least 15 minutes before cutting and removing from the pan.

Lastly, Sprinkle pecans and cacao nibs over the top.

This is just delicious! And no one will believe they are made with beans or bananas! That coffee aroma though…you need this!
